winter lemon cake

I know this is suppose to be a book blog but I like baking too! I'm glad a lot of people are interested to see what I baked.

I love lemony desserts. I found the recipe at kraftrecipes.com and it's soooo good! This is about my sixth time making it and it was perfection!

What you'll need:
13 x 9 baking dish (Pam spray it)
yellow cake mix
2 lemon instant pudding mix
1/3 cup sugar
2 cups of cold milk
1-1/4 cups of water
2 tbsp powdered sugar

Pre-heat oven to 350 degrees F. Follow the directions on the cake mix. Pour the batter in the baking dish.  Make sure you use cooking spray on the dish.

Next take the pudding mix and add the sugar, milk, water and mix well. I think this time, I forgot to add the sugar, but it still taste just as good.

Pour the pudding mix on the top of the cake mix batter evenly. Put the dish on top of a baking sheet and then into the oven. The baking sheet is to collect the pudding if it overflows. Without the sheet, you'll have a messy oven. (;

Bake time is about 55 mins to an hour. After it's done, let it cool and sprinkle powdered sugar on top. And ta da~ you have a warm winter lemon cake! It think it's so cool how the pudding just sinks to the bottom of the cake so it's like soaking in lemony goodness. The best part about this cake is that you can eat it warm or cold! When it's warm, the pudding is so gooey and yummy.

This picture was taken when served cold. You can really see the cake and pudding layers, or at least I can.

Well I hope you enjoyed this post. Next I might make a chocolate trifle or cheeseburger cupcakes. (That's right cheeseburger cupcakes.) Help me decide please. (:

  15. Interesting how the pudding doesn't really sink or mix with the cake. I'd have imagined that the pudding was put on after it was baked.
